1 pound mushrooms
4 teaspoons water
2 spring onions or scallions
1/2 teaspoon Spice Hound Minced Garlic
1/2 teaspoon finely grated ginger
2 teaspoons Spice Hound Curry Powder
1 teaspoon salt
1 teaspoon Spice Hound Garam Masala
1/2 cup apple juice
2 teaspoons lemon juice
Clean mushrooms and cut into large chunks. Slice onions or scallions fine.
In a medium nonstick pan, put in water, onion, garlic, ginger and fry until soft (add more water if necessary). Add curry powder, salt and mushrooms, stir until mushrooms release liquid, then cover and cook on low for 8-10 minutes.
Sprinkle with garam masala, add apple juice and cook uncovered, stirring until heated through. Remove form heat and stir in lemon juice. Serve with rice.
