Tropical Fruit Medley
1 (15 oz.) can pineapple chunks in juice
1 (10.5 oz.) can mandarin oranges drained
1 medium kiwifruit peeled and sliced
1/2 cup peeled, sliced banana
1/2 cup vanilla low fat yogurt
2 tablespoons softened cream cheese or Neufchatel cheese
2 teaspoons minced Spice Hound crystallized ginger
1 tablespoon unsweetened toasted shredded coconut
Drain pineapple, reserving 3 tablespoons of juice.
Combine pineapple, oranges and kiwifruit in a medium sized bowl.
Place banana slices in a small bowl; add reserved pineapple juice and mix.
Add banana slices to fruit mixture.
Combine yogurt, cream cheese and ginger in a small bowl; stir well.
Spoon your fruit mixture into individual serving dishes.
Drizzle each with 1 tablespoon yogurt mixture and sprinkle with coconut.
Yields 4 servings.
