Dried yellow stigmas of violet flowers. Can be bought as strands or powder and has a strong, woody perfume and bitter, honey-like, taste. Used in Indian rice dishes, Spanish paella, French bouillabaisse, and Italian risotto. Goes well with fish, seafood, and chicken. In Britain, used in cakes and buns.
