Grains of paradise (Aframomum melegueta) is also called Guinea grains, Melegueta pepper or alligator pepper. Grown in large pods in West and North Africa, only the seeds are used and they have a wonderful spicy, peppery flavor. Often is used as a replacement to black pepper and can be grounded in a pepper grinder.
