Fenugreek (Trigonella foenum-graecum) is a plant used for both its leaves and its seeds. When found fresh, its greens are used as veggies.
The dried leaves (kasoori methi) are used to garnish many Indian curries and rice dishes.
The seeds are little hard golden-brown pieces of gravel. The aroma is similar to celery and the flavors are bitter. Used in curry powders, pickles, and chutneys. Our curry powder blend gets its main smell from fenugreek seeds and its beautiful yellow color from turmeric.
