Ginger (Zingiber officinale) is derived from a knobbed root, can be found in whole dried ginger, powdered, or crystallized. The whole dried ginger can be tough and fibrous. Crystallized ginger is sweet from the sugar used in processing it. The powder is less aromatic than fresh ginger but has a warm, spicy fragrance. Used in gingerbreads, cakes, biscuits, pickles, chutneys, sauces, sweets, puddings, jams, and barbeque rubs.
Crystallized ginger is NOT Whole 30 Approved. Ground ginger is Whole 30 approved.
